Ingredients (makes 6)
* 500 ml homemade almond milk
* 80 g sugar (100g if you prefer sweeter)
* 50 g cornstarch
* A pinch of cinnamon
* Almonds to decorate
Method
This recipe is usually prepared with homemade almond milk so I used my @themilkyplant to make the milk, which only took me a few minutes because there is no soaking required. I put the almonds and water in the respective compartments and pressed a button and I had a rich and creamy almond milk.
I love the milky plant because you can create your own mixes of plant based milks, super quickly, without having to use a nut bag, at a lower cost and you get a milk that’s free of additives and preservatives, oil or thickeners which are often in store-bought ones.
Once you have the almond milk, add it to a pot, keep some aside and mix it with the cornstarch to create a slurry
And add it to the pot with sugar, cornstarch and cinnamon. Cook it on the hob on low heat until it thickens. Transfer the mixture into molds, small bowls or glasses, let it cool down then place it in the fridge for about an hour.
Serve it and decorate with more almonds and cinnamon. You can also add pistachios, chocolate, anything you like really.
